So I'm just curious, one can I use unraid on ryzen, just because I'm planning out my next build on a budget. Two, regardless of what I run it on, can I virtualize OS X on unraid? I know I'd need beefy hardware, but I'm okay with that.

They are possible but they will need some time to optimise, especially OSX you will have to find the right versions and flags that will work. We cannot help you with the OSX part here as it is against forum rules to talk about Hackintoshes. However, if you need help with UnRaid you can ask here for help if needed.

Check the latest AMD community update (sorry can't link you from this PC but you can google) the features necessary to do this have been added in the latest update.
