And a quick question is anybody know of a benchmarking software that really pegs hyperthreaded cores as well so I can see if there is activity.

Cinebench r15 is nice at stressing cpus with a lot of cores.

Awesome thank you its all working great. It was HWmonitor all along. It also had a little bit to do with (after some research) the mobo not having 100% compatibilty for xeons.
