So I've been looking into backing up my Blu-ray discs (that I bought) and I was wondering if using/running decryption software such as AnyDVD and MakeMKV has any potential/risk to damage to discs. My obvious assumption would be no, but I just want to make sure.

Can it physically damage the disc?  Of course not.  Will the captured file be an exact replica?  Perhaps not.

I would be tempted to just take an ISO file of the disk and then load that into bluray software for playback, rather than try to rip them since that will almost certainly compress them quite a bit

Does that work?... How would that be a better option?

Does it work?  It worked for me once but I can't guarantee it'll work on every disk ever in every drive never no, especially since all the DRM they build into things.  That said, the "nice" thing about this technique is if it does work, you're capturing all the DRM along with it, not breaking it, so I can't imagine even the most stringent of rule followers having an issue with this.  Ripping is more of a grey (but widely accepted by most) area however.

Did you use a DVD or a Blu-ray?

Yeah that doesn't work.

Bluray.  But as I said, I wouldn't expect that to work for everything... perhaps they don't allow that anymore

When did you try this? When I did it I got the DRM copy protected message about needing to play the original disc. Might be something to do with the protection version (I assume).

I would think so.  It was quite a while ago... probably 5+ years
