Will my GPU be damaged?

It'll be fine.  blower style cards run that hot for years without issues

no it wont

 

the system will hardlock before it does if it gets to so high temp (something like 105+)

Card shouldn't be getting anywhere near that hot when watercooled but 80c is still okay.
