Question is Will it work?

The only reason I havnt used a NUC as a server is it only has one NIC. That is not an issue as you already have the hardware. You can make it work with one.

And because it needs hard drive what better to use 250GB Intel SSD 540 Series or a 500gb used hard drive?

SSD will do. You prob want some speed for squid. I think 250GB is heaps for squid.

Throw snort on there while your at it.

I have a Intel Nuc Box (https://ark.intel.com/products/95062/Intel-NUC-Kit-NUC6CAYH) , so I got an idea to use it as small home server based on CentOS done bit of research about it and so far the plan is to run Pi-Hole, Squid , OpenVPN server and share printer between windows clients.

Question is Will it work?

And because it needs hard drive what better to use 250GB Intel SSD 540 Series or a 500gb used hard drive?

Spoiler

Legolessed - You don't have a 10 terabyte raid array in your phone?
