old computer server operating system reccomendation

Hi all, looking to make a server out of an old computer with old specs

AMD Sempron 3000+

2GB ram

onboard graphics.

 

I want some operating system reccomendations. I wanna set up an email server and a plex multimedia server on it. I'm more comfortable with Ubuntu, GUI optional but can't beat it for ease of use. I'm tempted to use Lubuntu but I don't know if that'd have all the support for this sort of thing. Ubuntu Desktop chugs on the computer, and I'd really rather not have to restrict myself by using the server version. In a pinch, i could learn something like CentOS or RHEL I guess.

Ubuntu Server would fare well

Sempron would get absolutely destroyed by plex, my Atom D2500 is as fast as that and it struggles with transcoding 480p

fortunately i'm only doing music streaming and most everything is in mp3  so there shouldn't be much transcoding required correct?

No, there shouldn't be at all.

right then, so install the server version, install plex, get my music on there, install the email server. don't touch it. got it.
