Today i picked up a 2TB HDD (Hitachi HDS723020BLA642) which is much faster than my old hdd which was the one that came with my old laptop WDC WD3200BPVT-22JJ5T0. However everything including Windows is obviously still on the old one with speeds never topping 10mbps resulting in a terrible boot time, however once booted it's pretty fast. Is it worth going through the hassle of reinstalling windows or is there a simpler way to move my Windows to the new HDD? My new one is currently at speeds of +- 150-200mbps.

You can clone the drive using drive cloners. That being said, I still recommend a fresh install.

I wouldn't move it, but rather wait until you have an SSD. Then do a fresh install of Windows.
