How do I properly set up Gsync?

I turned off vsync and stuff in control panel, but now there's tearing when going above my refresh rate.

Also Gsync only helps for lower frame rates below your refreshrate of your monitor because if it isn't then it won't work and it will have tearing for different times moving around while Vsync caps your framerate so that if it does go over the max refresh rate then it will reduce tear

Right, but then if the fps goes above my refresh rate, I'll still get tearing.

If you take of Vsync it will cause tearing because if there is for example 60hz monitor and 75fps then the frames will overlap and cause 2 different pictures causing tearing
