970 powerful enough?

The 970 will run out of both the VRAM and GPU horsepower. Its got only 3,5GBs of full-speed memory, for such resolution you need a more powerful GPU solution such as the GTX 1070.

So I want to invest in 2 more monitors for my setup. All will be  all 1920x1080 so 5760x1080 in total

 

I will be playing stuff like Project Cars, Dirt Rally and Assetto Corsa.

 

Will a 970 be powerful enough to handle these at 60fps ish??

It might struggle to keep a stable 60 FPS, I would recommend you start looking for a GTX 1060 6GB or GTX 1070 8GB.

If mid-ranged cards were considered, an RX 480 8GB or an R9 Fury would both be better choices than the 1060 6GB for around the same price, but I don't believe those would suffice for 60FPS Ultra.

5760*1080 is 25% less than 4K.

 

GTX 970 is meant for 1920x1080.

 

Well if you turn down all settings to low it should work at 60fps but I don't think that will be great user experience.

Even GTX 1070 would strugle with taht resolution, because GTX 1070 can handle max settings at 2560x1440. But 5760x1080 require 40% more power.

Your best bet would be Titan X Pascal or GTX 1080. Anything below that won't give you 60fps at ultra settings. At least not for all games.
