sounds like you need to add some deadzone. unsure if beamng.drive has such an option though

So, I bought an Xbox One controller for my laptop, and it connected up, worked in Beamng.drive, which is good. The only thing is, when I turn even slightly, it doesn't completely center the steering. Does anyone know how to fix/calibrate this issue? Thanks :)

I'd guess it is due to game settings, not the general controller setup.
