If I put a and gpu in my intel build would that be just as good as an nvidia gpu

Yes, you can use AMD GPUs with Intel CPUs and chipsets. You can also use NVIDIA GPUs with AMD processors and motherboards if you choose. The only thing you can't do is run an Intel CPU on an AMD-compatible motherboard, or vice versa.

That used to be true, but you can assume that any GPU goes with any Motherboard as long as it has a PCI-e slot.

PCI-e slots are on basically every motherboard. I haven't seen a normal consumer motherboard without it in years.
