Geforce experience will detect the new hardware and will prompt you with a driver update if needs be...

if that is the case i would recommend you select to do a custom install and manually select the option to do a clean install.

You dont 'have' to as the Nvidia driver you have installed will detect the new GPU and install the required driver for you.

It is generally best practice to clean old drivers before you start, personally I would use DDU to clean off the old driver before starting.  It will work either way, you just have a cleaner driver install doing it fresh.

does it do it automatically when i boot up my computer with my new gpu?

It should do when you launch GeForce Experience. I think it's set to launch in the background by default, so you should get a prompt even if you don't launch it manually.

I personally would just use DDU, switch out the graphics card, then install newest drivers. Just to clean up some old drivers and get new clean ones installed. Is a one-time job and is less likely to cause issues. Doesn't take that much time either.
