The i5-6500 will not bottleneck your gpu. You can play any games you like.

Whatever this should mean...?

The GPU clock is indepedent of your cpu clock and the motherboard chipset.

Your factory overclocked gpu will do the same as if you got an i7-6700k.

It will be ok, it is a very decent gamers CPU. You might run into CPU limitations on games that are very CPU heavy. Even if you are no OCer (like me) I still take unlocked for a good reason: extended usable lifespan and cost savings. True that you spend less now, but if you run into limits a year form now you are forced to get another CPU or depending on when it happens even more like a new platform. Even buying a upgrade secondhand it cost you more. So I recommend to spend a bit more on a Z170 board with a unlocked variant.

The object of life is not to be on the side of the majority, but to escape finding oneself in the ranks of the insane.

The only "factory" over clock on the i5-6500 is the included turbo boost technology. You can base clock overclock some locked chips on Z series motherboards.
