Maybe dead SATA port on the mobo, try switching to another header

Desktop (Old but I never replaced it):

Delidded Core i7 4770K - GTX 1070 ROG Strix - 16GB DDR3 @2000Mhz

I swapped them over and now the SSD shows but the HDD doesn't...Has to be the SATA header on the mobo :( I guess I can only have one of the two plugged in now :(

does your MOBO really only have 2 SATA headers?!
