Building for Gaming and FFMPEG Transcoding

I want to build a gaming rig that is good at transcoding with FFMPEG. I was thinking of getting the NVIDIA GTX1060 8GB which allows for hardware acceleration with FFMPEG. I am trying to decide on the CPU. Should I go with an Intel i5 6600K or the i7 6700K? I am transcoding for my personal needs so it this isn't a time is money situation. I was thinking if I use the hardware acceleration with FFMPEG I should be able to go with the i5 6600K and not miss the extra power of the i7 6700K.

 

Maybe I am looking at the wrong graphics card. If I am let me know that too.

If the program you use can use 4+ threads look at the 6700k, or possibly the 6800k, if it is singlethreaded then the i5 should do just as well as the i7.
