Recommendation for Mini PC

The Gigabyte Brix have pretty good reviews, and you can get them either barebones or with RAM/Storage etc i think. relatively inexpensive too

In order to get yourself a DP, you'll probably need an adapter, and this will do fine. Add an SSD for faster loading and such.

I choose the pentium because it is ~$15 more for much better performance and choose the rx 460 to make this capable of doing light gaming/esports. If you don't need that just replace cpu/gpu. I also choose a big psu to allow for upgrades later, plus its reliable amd it looks pretty good, but this system can get away with far less wattage.
