How much would the i3 6100 bottleneck the Rx 480, and if it is that bad what should I get instead?

I'd go with the 6300 at least. It's preferable to get a better CPU and a mid-tier GPU from the gate than getting a cheaper CPU and a high-tier GPU.

 

I'd get a 6600K and a 470 4GB unless you're going to use VR in which case the 480 would be better.

I've been very happy with the performance of my i3, especially OC'd to 4.5GHz, I have no problems. I can use Photoshop, Premier Pro, ect also

Motherboard was overkill. You can upgrade the CPU to the 6500 or 6600 if you'd like. I would add a WD Blue or Hitachi 2TB.

Oh... I think we have a misunderstanding. I'm saying to upgrade to the 6300 since its only a few bucks more.
