Rx 480 and future proofing

I plan on adding an Rx 480 to my new system and later adding another in 2 - 3 years. By then, would 2 Rx 480s be good enough to last me another few years and if so how many years?

The Rx 480 is plenty for now. But you have to remember, in PC's (lets pretend the Titan series GPU's dont exist), you get what you pay for. The Rx 480 has set the standard for what a $250 card should do. So it's a mid range card from the start. It will fall behind (aka you will have to turn down settings in games) in 2-3 years. Adding another might get you another year out of it to be honest.

Adding a second RX 480 will last you exactly 0.08333 Jupiter years in arbitrary game at arbitrary resolution and detail setting.

Should I just get a gtx 1060 then and just upgrade to an entire new graphics card in a few years?

Because it has better performance and if I get something like a gtx 1170 or an rx590 in 2 or 3 years, I wont have to do crossfire and stuff.

I5 6600k. Probably going to upgrade to 7600k when it comes out along with a new mobo if it comes out and I can get them during the holidays

Why not just keep the 6600k and wait for it to be 2 generations old and invest in a gpu instead?
