If I were to make something like a HTPC but don't want to go out and buy a HDD, would it be possible to make a sizable thumb drive into the boot drive to install the OS on and another for storage?

If so, how?

All displayed on an AOC I2421VWH

Yes--especially if you're using something light like Linux.
