Before I start I take a long time to reply because I have a life and also I will take recommendations to go to AMD but I kinda got scared away with the small faults here and there with AMD... *Cough Cough* Just Cause 3

 

At the moment I'm running with these specs

i7 6700

16gb (2x8gb) ram

Gtx 960 2gb

750 watt PSU

 

And as a lot know... A GTX 960 will have a "interesting" time running VR games :) so what I plan to do is buy a GTX 1070 or a 1080. What would be better in the long run? one 1070 and maybe get another 1070 (In SLI) later or just a 1080?

My Budget is $1600 (New Zealand) I can afford a 1070 and the 1080 and I know the 1080 is better but I heard 1070 in SLI is better for VR (But I don't believe it). I'm going with a HTC Vive and I also don't just game I do some rendering as well but I think that's just CPU bound.

 

So In a nutshell. I need a GPU that can Handle 3 Monitors (1080p, Possibly one might be 1440p), VR and rendering.

Well if your going 3 1080p/1440p monitors I'd say 1080 if you have the money to do so, also I agree with the idea that SLI isn't better for VR mostly due to nvidias new software that renders once displays twice.

According to the steam vr benchmark  all you need is a 980, a 1070 will suit your needs and should be good for some time, you could also sell it when Vega comes out or the 1080ti, I don't think AMD will be as good as Nvidia in VR though because of the new technique used to render frames for each eye basically doubles fps (supposedly I have yet to see it). If you want to game on 3 monitors at once then sure get the 1080
