How much power needed?

An EVGA G2 750 or 850 would be great.

 

750 if you won't OC much or have a tight budget (although you ARE getting dual 1080s :P )

850W is plenty. The 1080 isn't power hungry. The 850W EVGA GS/G2 should work fine.
