I'm building a headless media server and need some help with planing

So I got the idea to build me a headless media server and I need some help with component selection. Have not had a server before so this is relatively new to me, i'm more familiar with the PC side of things. I don't want to spend too much money on the server (up to $500 USD). I have checked into some LTT (Linus Tech Tips) and Paul's Hardware videos about this (check sources) and have got a pretty good grasp of what I will need to buy, but it would be good to first hear what you guys have to say and opinions you may have.

 

This is my pick of components (as you can see by the choice of motherboard and case, I'd like a small machine)

 

Location: Sweden

Budget: $500 USD

 

 

The goal of the server:

  • Fast transfer speed between my computer and the server (1g)
  • Torrent client (Deluge)
  • Plex Media Server (1080p Remux streaming)
  • NAS Server
  • Reasonably low power
  • Should be up and running 24/7

I actually havent decided yet. It's either going to be FreeNAS, OpenMediaVault or an Ubuntu server. ECC supported MOBO's for the 1151 socket are too expensive for me. But I haven't looked into a 1150 or 1155 setup yet.
