A singl ephone line only uses 2 wires, so most phone jacks are 6P2C or 6P4C. There are times when 6P6C or 8P8C are used in phone jacks, mainly in offices where you want a very high density of phone lines per outlet. They do make business phones that can handle 4 analog lines at once. 

 

Ethernet always uses 2 or 4 pairs, so ethernet is always 8P4C or 8P8C. 

 

P means positions and C means Copper, as in how many positions actually have a wire in them.

 

Edit: original ethernet using 2 pairs was designed so you could have a phone line and an ethernet line in one connector. That is why when you look at 568A and 568B wiring diagrams, one of the pairs is split around the center pair. The center pair would be ised for a phone line in early building wiring so that a 6P2C phone cord plugged into the outlet would still be able to work.

I fully agree, 8P8C is also used for VOIP.
