best capture software (quality)

wanna have a go at making some youtube videos ive been using shadow play thus far but I know its not the best, what is the best software to use for quality, and what is the best way to process/encode it for youtube in the fdew things ive done ive used windows movie maker presets but im questioning if that has been part of the reason the quality of the few things ive uploaded has been ass (example below)

 

keep in mind video encoding and what not is not somehting I know much of at at all...same goes for video editing/edioting software
