Been planning or thinking of building two hackintosh servers, I understand that OS X does something with optimizing hard drives automatically like defragmentation, but my question is, would that feature interfere with something like RAID?

Not sure how exactly OSX Server would handle it, but I cannot imagine it would be that different to Windows or Linux's implementation.

Spiceworks has a nice Q&A Thread on Defragging RAID Arrays you can peruse, but the general consensus is that it should not affect a normal RAID setup.
