I bought 2 Xeon 5460's.  After more research it seems that I cannot do a VM.  So rather, I will use this setup as my testing of using Unraid for the first time, NAS backups and running an internal file server for my home.

Yes and I wanted to do this on the cheap before I did it on a larger scale.  Any recommendations on what to do with this server I will be building?

I spent about $200 bucks for everything.  Board, ram, coolers, processor, towers and hard drives.  Bought separate online and local.  Ideally I will be running dual 3960x's 64GB ram, dual 980 TI's (reference) with a NAS backup.  But that's later.
