You can use MSI Afterburner's feature that allows stats to be displayed in 3D environments. Bear in mind that Precision X can also achieve this functionality(they're based on the same software which is RivaTuner) so if you prefer that application, that will work too. The amount of VRAM is not relevant when overclocking.

Yeah stability in a overclock is tricky. I've had some really strange side effects of a unstable overclock. Just be on the lookout for something not of the ordinary. If you have any concerns just pull back on the overclock and see if it helps.
