So I want to use one of the 5.25 drive PC fan controllers with LCD readout to power four PC fans (three 80 mm and one 200 mm) without it being used in a PC (I will build a custom enclosure for the device) and without the need to power if off a PSU block. 

 

This is for a keezer build I am setting up (the fans are for moving air in a chest freezer to combat temperature fluctuation and condensation) but I thought the PC fan controller would be my best bet in providing the functionality I desire, so keep in mind my knowledge of PC hardware is not fleshed out (and several years dated).

 

Would I be able to power the fan controller off a molex to AC power adapter with minimal risk of hardware/power failure? If so, what would be the best method to go about setting up such a project?

 

*FYI, the PC fan controller won't actually be inside the device; I will wire the cables into the device.

Sounds like it's doable you could rig up a regulated power adapter and wire up the fans off of a breakout board or terminal block to the individual fans. If the keg cart itself has a power bar or place to split off using a DC supply on itself wouldn't be bad less cables to route around.
