So I bought a 950 pro (512gb) and a 1tb 850 evo and im wondering whether I should return them and get a 2tb evo.

2 and use them separately so you always have a 2nd drive to fall back to should one fail

Raid 0 is double the speed, and double the chance of losing all your data (well, not entirely double, but still, you get the point). Shouldn't be a problem if you backup regularly.

Raid 0 is only beneficial for large sequential operations. In random operation it can be slower.
