I have around $510 to spend on my PC/Setup.

But I'm stuck between two options, first of which being a DX-Racer, K70, and one more Acer monitor (For a total of 3).

The second option is an i5 Skylake CPU, Gigabyte 1151 Mobo and 16GBs of Corsair Platinum DDR4 memory.

 

My current setup has a rocking chair for a seat, 2 monitors, and a Razer Black Widow Ultimate 2014 keyboard.

My current rig has an 8350 at stock clock, 8gb of avexir ram and 8gb of vengence lp ram, with a Gigabyte am3+ mobo.

The i5/DDR4 upgrade seems like the most logical way to go but Dominator Platinums is a bit overkill, don't you think? Save some money by getting cheaper RAM.

what this guy said. Id definetly go that route but get cheaper RAM, that RAM isnt really worth it. With the money you would save you could still get the keyboard or have some stored for the next upgrade (there is always the next upgrade...)

You completely ignored the new motherboard.

That's around 100 dollars unaccounted for, hence why it's not "option 3".
