If have 2 intake and 1 exhaust is that good? 

Yes. It is called positive air pressure when you have more air being brought into the case than exhausted. As long as the intakes have dust filters, it helps prevent dust buildup in the case. 

How do I know which way the air is going through my system? 

 

I've got a corsair Spec-01 case with the installed fan (haven't touched it so its in its standard form)

I've got a hyper 212 evo with the fan attahed on the side nearest the front of the case 

Finally I've got a 120mm Corsair fan at the back

If you stick your head into the case does it feel like the warm breeze of a day in the summer of 69'? If not then you probably have no airflow.

There should be small arrows on the side of the fans, otherwise just drop something light by the intake and exhaust and watch were it goes.

If you stick your head into the case does it feel like the warm breeze of a day in the summer of 69'? If not then you probably have no airflow.

My room is warm anyway, how do I tell xD

There should be small arrows on the side of the fans, otherwise just drop something light by the intake and exhaust and watch were it goes.

well the way the arrows point is the way the air goes. Otherwise like i said drop something.

Look at the fans. The support bars will almost always be on the side that air is being exhausted. So, if you look at the fan from the side, if the support bars are on the left side, the air is going to be pulled in from the right and pushed out the left. 

 

If you haven't moved the fans, then the intake will be at the front, and the rear fan is exhausting air out the back. The fan on the cooler should have the support bars against the cooler if it is on the side closest to the front. That way it is moving air towards the back of the case.

Yes. You usually want more intake than exhaust. It keeps the dust out if the intakes are filtered.
