Finally, I'm settling into a reasonable PC build, it will be used mostly for gaming, programming, some photo/video editing. Would those specs be good enough? Also, what do you think about GPU + Monitor combo would it pay out? Any concerns I should have for the air cooler ? Please feel free to suggest and/or comment ... Thank you  :)

$1500 should easily get a Fury or 980Ti.

Better air cooler.

If you can live with the lesser keyboard. ( Still CherryMX Browns ) and a smaller monitor, I would go for the 980. For $441 it is a steal.

That's very decent build... Will think about it ^_^

The problem with the 25" ultrawide with me that it would feel narrow, while the 29" has the same height of a 24" which is more comfortable ... I don't I will think about it ...
