Corsair fans are really poor just fyi and you don't have any reason to use them anyways.

go with a 980 ti if you can, best performance you can get in a single card thats worth buying

Go for a 6600k with the apropriate motherboard, along with 16gb of DDR4 ram ( it's only like $90 usd)  and you're good, everything else is fine ( the 970 build ) unless you want to get a 980ti instead of a 970 and eventually upgrade to a second 980ti. ( You'd have to get an SLI motherboard for the 6600k too)

This is an optimization of the first build. The define S comes with 2 fans, so you need a max of two more to fill out the 4 slots available if top mounted.

The fans I choose are quieter yet move more air. The HF-14 venturi fans would be best but they are a bit expensive.
 
I would however suggest considering a 980ti instead of sli 970 as its about the same price with about the same performance but without the headaches of SLI.

Otherwise if doing 1080p gaming instead you could opt for a 980 or a 390 (970 doesn't beat 390 basically ever, but sli 970 uses just over half the power of CF 390 so it's imho a better idea for cooling purposes).
