I think it would likely be more cost effective to just get one big TV than 8 monitors and an extra 980 Ti

Not to mention the size of the desk you'd need, plus the cost of treatment for the RSI you'd get in your neck from turning it up and down and side to side constantly. All for Minecraft lol
