One Fury/FuryX is enough for those games imo.

I use two GTX 980s for the same resolution.
I can play most games on maximum settings at around 60-100 FPS, depending on the game.

Shadow of Mordor for example runs on maximum settings at around 70-80 FPS.

So I would recommend at least two R9 390X or Furys. One Fury X might also be okay if you can live with turning a few settings down.
