What are the rj45 connectors with a metalic shield for? what adventage do you get out of them?

They're shielded cables. Should say on the cable something like "Cat5e STP" as opposed to other cables which would say "Cat5e UTP". It's there for longer runs at higher speeds or for use in places with a lot of interference. Big bundles of cables, cables that have to run near power etc.
