Just a simple question. I plan to buy a Samsung 850 Evo 250gb SSD as my OS drive, and a Western Digital Black 2 TB HDD. I currently own two Seagate Barracuda 1 TB HDDs. Is it possible that I have the following setup: 850 Evo as my OS DRIVE, WD Black as a MEDIA DRIVE, and a RAID for my Seagates giving me another 2 TBs of space?

Yes. When installing the OS just connect the SSD, then deal with the HDDs accordingly.

You should have no trouble configuring all of this at all.
You simply install your OS on the SSD, plug everything else, go to Disk Management and configure the two drives that you want in a New Striped Volume. This will delete everything from the drives, so make sure you have backed all the data up before that. 
Do have in mind that RAID0 does not offer any redundancy at all so I would keep a backup of everything important from that array on another drive.
