weird dual-boot setup

So basically I have fallen in love with linux more specifically ubuntu with gnome 3, but to my dismay dirt rally wouldn't run even in playonlinux an emulation software. so i decided to reinstall and run a dual boot, after installing windows I imaged my usb with ubuntu and shrunk my partition. BUT, when i boot i have to choose in my bios (msi_clickbios) UEFI hdd or main hdd to boot between them, is this normal as far as i know a gui would appear letting me know what os i am choosing im confused but not worried as it isnt broken simply odd, any advice on what to do would be appreciated.

WarThunder = Tank destroyer and sometimes my KV-1B if im bored 
CSGO = Sniper, I seem to be able to AWP 'well' apperently 
RPGs in general = Mage or Tank w/ resoration

That's just how it works, if you didn't install custom multiple boot software to the BIOS.

I'm new to Linux.  I've read some articles http://www.dell.com/support/article/us/en/19/SLN151792/en on dual booting however understanding how I select which operating system is confusing for me.  I'm getting  tripped up at step 5. Configure Boot Order.... as it talks about changing code for in the MBR, which seems daunting especially because it doesn't say what to change, do you know what it is talking about?
