for some reason my two monitors one on DVI and one on HDMI only work together. Then when i plugin my 3rd monitor to the other DVI my 2 other monitors shut off and get no signal. Should i get a DP-DVI adapter?

What monitors do you use? Some will support daisychaining which would make it a lot easier. Otherwise you'll need to find out which ports will work together and that'll probably mean buying an adapter.

the two that work together are AOC E2060SW and the one that makes them shut off is a Gateway FHD2401

Those don't support daisychaining as far as I can tell. I think you'll need an active DP adapter or a DP hub (if all your monitors have DPs).

Yeah that should work. But first, are the two identical monitors both connected to a DVI port? According to AMD's website, most R9 series cards (though the 280 isn't named) can be connected to three monitors using two DVI ports to identical monitors and one HDMI port.

all of them would work in windows 7. and no the 2 are one in dvi and other in hdmi

Quick question, the AOC's only have a vga port? So right now you have two DVI -> VGA adapters connected to the AOC's?
