Its not 1 software, its more of a group of software providers. So audio professionals have their software, video effects have theirs, and editors have their own too. its more of a project if you think about it. I imagine premiere and after effects would be prime candidates, but others fall into this as well. Adobe is really nice :)

Maya is pretty big in CGI. I would also imagine software like Mudbox or ZBrush would also be big. Some form of distributed computing software would also be present so that it doesn't take a month to render a single frame.

It's completely blown out of proportion. Also if you're the least bit worried about data gathering then you should go live in a cave a 1000Km from the nearest establishment simply because every device and every entity gathers information these days. In the current era privacy is just fallacy and nothing more.

they use a combination of the adobe suite as well as Avid, Sony Vegas, and Final Cut. Those are your 4 Main editing software for Movies.

Animation is a whole different ball park, they use anything from your freeware software to hand made software, and everything in between.

I went though 4 years of High school movie making which we were trained in all of these because its the 4 most used editing software. and i'm not talking shorts, we made movies that have been premiered in theaters and they average 1hour 40min and take all year to film and edit.
