I set a backup for my computer before I attemped to move my users file, once I had failed to move the users file I returned to my normal user profile only to find that my entire users folder had been deleted apart from the videos folder. I tried to restore the backup but it didn't seem to include the pcitures folder, yet it included the videos folder with all of the videos inside it. On further investigation I found my pcitures, documents etc folders in the backup however they were empty. Can anyone help me get these files back please

Look up a program caused Recuva, it may save your butt. If you have no luck with that, install a linux distro onto your usb thumbstick, something like Puppy Linux, or even Ubuntu. Boot off of the thumbstick and try and find a folder in your drives which wouldn't have been there on Windows. It can be called a number of things, but usually it's something like 0000bin or trashXXXX, etc. Your documents may be in there. Good luck!

I have tried your first method of using Recuva and it found the files however when I went to open them windows photo viewer just displayed a message saying "Windows photo viewer can't open this picture because the file appears to be damaged, corrupted, or is too large." so by the looks of things the files seem to be damaged somehow

Try opening the files in Photoshop, it may be able to register at least certain parts of the images. I also have a vastly more ghetto method that I've used before, and ill write that out for you when I get home from work.
