SSHD drives are great if you mostly use only a few applications. It has a small (usually 8GB) SSD part that stores the boot/system files of the most commonly used applications and enables them to load faster. You, however, have no control over what goes there and the drive itself decides what is mostly used and stores the files.
WD Red drives are great for RAID0 as they are NAS/RAID class drives and have additional features that enable them to work very safely and smoothly in such environments.
Depending on what you need from the storage, both options are good. If you need more speed in general over everything, I would recommend going with WD Red. Do have backups of it since RAID0 offers zero redundancy. If you only use a few applications, the SSHd can also be a good option.
