Should I go with 1080p 27" or with two 24" 1080p displays wich would be nicer but also more expensive

or with the Samsung LS27E510CS? wich would be the most expensive option

As a user with a single 1080p 27" monitor, I would prefer dual 24" monitors due to better productivity.

Primary uses?

 

27" 1080p is a real stretch for pixel density, but if you sit back from the screen it looks good.  If you can afford 1440p 27", that would be ideal.

I would get the 2 24". I have 3 27" monitors though and i see no problem with them individually, but still i'd go with the dual setup. After using 3 for so long i hate having to use a single monitor setup lol. Multiple is better go with that :)
