Ssd or external?

Would it be faster or better to get a 2 tb external and putting everything on there to boot from or multiple ssds?

Internal drives are generally faster than external ones. SATA 1, 2 and 3 connections are 1.5Gb/s, 3Gb/s and 6Gb/s with the third one being the most popular and current one. It supports speeds up to 750MB/s and SSD can use their full speed on the port (around 500MB/s-550MB/s).
External drives mostly use USB2.0 and USB3.0 ports which support speeds of 35MB/s and 350MB/s respectively. Unless you are using a eSATA or some other port that would allow you to utilize the full speed of a SSD, I would suggest using an internal port for both your SSD and HDDs. Do have in mind that some programs cannot be run from external drives. :)

Multiple SSDs would be faster, especially if you run them in raid.

Sata is 8Gb/s

USB is 6Gb/s

Sata (Internal) would be faster. For multiple SSD's as an OS drive, I wouldn't recommend. Because in the event of a Drive failure your whole OS gets wiped. Also, it takes extra time for RAID to initialize.

Yes.. that's what I do with data, I run everything form a 1 TB drive and have a Samsung 250gb in my laptop.
