Does it matter?

Yes.

Does it matter enough to care?

No.

Every extra inch of tubing you add, the flow rate you set your pump to, the fitting you choose, the Radiator thickness, the amount of water blocks. It all matters, but certain details matter more than others, and any Reservoir you pick for aesthetic purposes will work just fine. Just make sure if you get a "Tube" reservoir and plan on mounting it sideways that the reservoir is certified to be used that way.

Hey there LMG followers!

I am currently in the process of looking to water cooling my PC and I was just wondering if the size of the reservoir matters.

The only real benefit of larger reservoirs are easier bleeding and filling of the loop compared to small reservoirs and more headroom if you have a lot of evaporation, but overall no real difference as others have said.

Theorically you can run with no reservoir but then you lack an indicator of your fluid levels until you hear your pump sucking in air.
