I know pretty much nothing about virtualization, and i'm wondering what is the correct way to setup storage for a virtualization server

so let's say that i want a web server, a mail server, a nas, and another nas. what do i do?

should every VM have its own dedicated HDDs (redundant, so 2 HDDs per VM)? should every HDD have its own backup drive? so should i add 3 more HDDs every time i want to setup a new VM?

it sounds ridiculous, but not doing so sounds even more ridiculous because you want your VMs not to share physical media (don't you?) for the sake of performance and independency

Is this just for personal use, corporate environment, lab, ...? You wouldn't really need an extra backup if you're already using a raid, unless you want off site backups.

is there are specific reason, why you want/need separate servers in VMs?

i thought that VMs were the way to go about maintaining different services in a business environment

isn't it a bad idea to have my NAS running on the same machine as my web server and my management software?

this would be for a medium business

I'd put the nas and mailserver each on their own raid 5 and the web depending on the size either raid 1 or 5 as well.

so that would be 9 disks + backup, for a total of 10 to 12 disks in my server, right?

web 2 or 3

mail 3

nas 3

nas 3

So at least 11 disks. I also wouldn't put back up drives in your server if I were you. Look into tape solutions that can be stored somewhere else or cloud backup solutions.
