yes you can use 3 monitors on one gpu but it may affect performance, But A 970 could handle it fine

If you are really worried about Fps and you dont want to run Eyefinity / surround you could Get a Less expensive Gpu To run the 2 extra monitors  and Run the main one for games on the 970, However I dont think is is needed

I ran 4 screens off of a 660 ti for a year. Still managed to play games in surround on decent settings.
