Its better to Use AIDA64 then OCCT coz i've read alot of reports that OCCT have some kind of bug in it which is not compatible with Devil's canyon CPUs and they crash on many settings when OC on OCCT but same settings on AIDA64 or Prime95 work fine.

CPU: i7 4790K | Ram:Corsair Vengeance 8GB | GPU: Asus R9 270 | Cooling :Corsair H100i | Storage : Intel SSD, Seagate HDDs | PSU : Corsair VS 550 | Case: CM HAF Advanced.

Not very common bug. I've used OCCT to stress test OC on 4790K and everything was fine. The GPU test wasn't working with that version but it might be fixed by now.

I use OCCT's own test with all default except the running time. For quick stability tests I use 10-15min test with 0min start and cooldown. For longer tests its 0min start, 1min end and 1h test. For full 3h stability test my numbers are 5min in, 5min out and 3h of test.

I'd suggest doing double stress when you find right clocks. You can use Aida or XTU as secondary. Or either of those as primary and OCCT as secondary.
