The PSU is way to overpowered! You could choose a 500-600w psu, even a passive one if you find one. There are new passivley cooled coming out but i dont know the brand/date.

A case with noise dampening foam like the define r4 will help with noise reduction, and you can get quiet fans for the h100i so you don't have to change the cooler. And also beware that some people have encountered coil whine issues with the ax 860.

I plan to do SLI in the future

I have chosen 2 NFF12s but for $75 less I can get a NH-D14 and how much noise will be stopped with the noise dampening foam on the R4?

I do really like the aesthetics of the 600T but not sure if its worth getting rid of it

If you're looking for silence/quiet, the Fractal Design Define R4 is hard to go wrong with.

 

If you really want silence, I wouldn't even overclock so you can have a scythe fan rotate slowly and still cool down the cpu.

You could also use some actual storage. The WD Red 3TBs have thick enclosures and are nearly silent even if you're a few inches away.

The small fan on the sabertooth is definitely not going to help your system's noise level. A much cheaper z87 mobo alternative is suggested.

 

As for the psu, seasonic makes a line of high end quiet psus called the x series.

It is ither the H100i w/ 2 NFF12 or a NH-d14, Im not too worried about HDD noise, I wasnt going to use the fans on ther sabertooth

There's a reason why the fans are thereon the sabertooth. They vent the air from under the thermal armor.
