I'm building my first PC soon and i'm choosing to go for a single Gigabyte GTX 970G1 GPU but will eventually want 2. The case i've chosen is an NZXT H440. However i've read that the card i have chosen is too long to fit in the case without removing hdd bays. I've read that for a single card removing the bays will be fine but i'm unsure whether it would be ok with 2?

It will be fine, and will fit the 2, with top 3 bays installed, and with the bottom 2 uninstalled.

Reference: I owned a H440.

Depends on the motherboard. Make sure the second PCIe x16 isn't one of the two bottom slots and it'll be fine.
